Recipe Review: Vegan Chocolate Chip Banana Bread

A couple of days ago, I had some seriously overripe bananas in my kitchen that were on the verge of rotting if I kept ignoring them. When a situation like this occurs, the only practical thing to do is stop everything and bake a loaf of vegan chocolate chip banana bread!

And that is exactly what I did.

I immediately went to Pinterest in search of an uncomplicated recipe. When I'm looking for a recipe it has to meet certain criteria:

  • The recipe must be concise because I hate, HATE reading directions/instructions. 
  • Easy - because I'm a lazy baker. Hey, that would good name for a blog...the Lazy Vegan Cook or Baker. Hahaha. 
  • Minimal prep time - because it was late in the evening and I was tired from packing boxes at the office.
  • Must require ingredients I already have at home - because once I enter my apartment I'm not going back out.

I stumbled onto this awesome Vegan Double Chocolate Chip Banana Bread recipe from Popsugar. Thankfully, this PopSugar recipe met every criteria.

It took about 10 minutes to prep the batter. The recipe didn't call for walnuts but I love a nutty vegan banana bread, so I just had to add it.

I ran into minor complications while making the vegan chocolate chip banana bread...

  1. I realized too late that I didn't have any baking soda. So I turned to my assistant, Google, to find a substitute. Apparently an appropriate substitute is baking powder; specifically, triple the amount of baking powder. 
  2. My loaf pan was too small for the batter. This meant I had to leave the bread in the oven longer than the recommended bake time; this resulted in a loaf with a slightly burnt top.  
  3. My bread didn't come out as chocolaty the PopSugar version but it was definitely chock-full of deliciousness. 

Despite the hiccups, this vegan double chocolate chip banana bread with walnuts was amazing! It was moist, delicious and easy to make. It was incredibly hard for me to resist eating it all.  

It took me about a week to finish it. I kept the load in the refrigerated to prevent any chance of spoilage. It's delicious when served warm with a touch of Earth Balance butter and cup of tea.
