Chickpeas, also known as garbanzo beans, is my favorite legume. Whether bought canned or dried, this versatile bean is always on my shopping list. Prior to becoming a vegan, I just added chickpeas to my salads along with a hard boiled egg, black and kidney beans as meat substitute.  Now chickpeas are often featured as my main course in most of my recipes; it's no longer just a topping to me and is consistently on the list of foods I'm absolutely obsessed with. 

Benefit of Eating Chickpeas

Chickpeas are a nutrient dense food that brings with it many health benefits; this makes it a great ally for me as I battle my PCOS and pituitary tumor conditions. 

  • Chickpeas are a good source of fiber and consuming fiber can lower blood glucose levels.  
  • Chickpeas contain iron, phosphate, calcium, magnesium, zinc and vitamin K which helps maintain bones structure and strength.  
  • Did you know that the potassium in chickpeas can help lower your blood pressure? 
  • Or that the fiber, potassium, vitamin C and vitamin B-6 it contains can help support bone health? 
  • Chickpeas also contain selinium which detoxifies cancer causing compounds, decreases tumor growth rate and prevents inflammation. 
  • Chickpeas are a source of choline, which helps with sleep, muscle movement, learning and memory.  
  • The high fiber content of chickpeas also prevents constipation, promotes a healthy digestive tract, increases satiety and reduces appetite.

You may notice an Indian theme with these dishes; it's because I love Indian food. Curry, garam masala, coriander, tumeric, and cumin seeds are spices I use to bring out the awesome flavor of some these dishes. 

My version of the coconut curry chickpeas with jasmine rice, avocado and fried plaintains. 😋
