What Vegans Eat: My Favorite Vegan Breakfast Yummies

Breakfast has always been my favorite meal of the day. Because of my love affair with breakfast foods, even as a vegan I yearn to eat it for lunch and dinner.  

When I lived in New York, there were so many diners open late into the night that breakfast was available all the time. Now that I live in Florida, if I have any late night cravings for breakfast foods I have to make it myself. 

Here are a few of favorite vegan breakfast yummies.

1.  Vegan vanilla & almond pancakes topped with soy whipped cream and berries. My concoction is an adaptation of the Very Vanilla pancake recipe I found on Pinterest. Check it out on Vegan Breakfast board.  I modified the recipe by adding two tablespoons of almond extract and a half cup of coconut flour. Together these ingredients give the pancakes a deliciously nutty flavor.

2. Vegan Dark Chocolate Pancakes. One of my favorite pancake recipes from the Happy Herbivore cookbook. This cookbook has tons of yummy recipes. Buy it on Amazon.

3. Avocado Toast. Smashed avocado on toasted sourdough bread is my absolute favorite breakfast food! I usually eat a entire avocado; sprinkled with Himalayan salt, pepper and a drizzle of oil and vinegar dressing. Absolute deliciousness!

4. Yummy Green Smoothie 

  • 1 cup of spinach or kale 
  • 1 banana  
  • 2 tbsp ground flax seed
  • 2 chopped dates
  • 1 cup of soy or almond milk
  • 5 ice cubes

5. Nondairy Overnight Oats 

  • 1 cup instant oats
  • 1 cup of soy or almond milk
  • 2 tbsp soy or coconut vanilla yogurt  
  • A dash of cinnamon  
  • Handful of blueberries or half a banana sliced

I usually make the overnight oats after dinner and keep it refrigerated until I'm ready to leave for work the next day. It's a quick and easy vegan breakfast food to whip up.

 6. Avocado, spinach, tomato and pickle sandwich with fruit salad. Sprinkle avocado with Himalayan salt, black pepper and drizzle with oil and vinegar.

7. Purple Power Smoothie

  • 1 cup of blueberries
  • 1 frozen banana
  • 1 cup soy or almond milk
  • 1 tbsp of chia seeds 

You may have noticed I've got a thing for bread, avocados and pancakes. I have a serious love for avocado toast. I wish I could eat it all the time.
